The Silog Guide: Filipino Breakfast, Served All Day

Silog is garlic rice, a fried egg and one protein, named in a single word. Six sets, served from 8 AM to 1 AM in Al Barsha 1, Dubai.

Silog is the Filipino breakfast formula: sinangag, which is garlic fried rice, plus itlog, the fried egg, plus one protein that gives the plate its name. Tapa makes tapsilog, tocino makes tocilog, daing makes daingsilog. One word tells you the whole plate, and like all great breakfast food it is wasted if you only serve it before noon.

The garlic rice is the point

Sinangag is day-old rice fried hard with a lot of garlic, and it is the reason a silog holds together. Fresh rice steams and clumps; rice that has sat overnight dries out just enough to fry into separate grains that carry the garlic. Every silog set here is built on it, which is why you never add rice to a silog. It is already the centre of the dish rather than a side.

The six sets on our menu

Every silog is a complete set with a drink or iced tea. Tapsilog and Daingsilog carry best seller marks on our printed menu, and both are what the kitchen would tell you to start with.

The set version and the full dish are not the same order

Two of the silog names point at dishes that also exist on the menu in full size, and the difference trips people up. A silog is a plated set: one portion of the protein, garlic rice and an egg, priced as one line. The seafood or classics row of the same name is the whole dish on its own, usually larger, meant for a table and not automatically served with rice or egg. Daingsilog and the whole daing na bangus are the clearest example of the pair. Order the set when you are one person eating breakfast, and the full dish when the fish is the centre of a shared meal.

What each name means

  • Tapsilog: cured beef tapa, thin and savoury-sweet, the standard against which every silog place is judged.
  • Daingsilog: butterflied dried fish, salty and crisp. The one homesick customers order.
  • Tocilog: sweet cured tocino, red at the edges and caramelised in its own sugar. No pork is served at Pinoy Tambayan.
  • Longsilog: garlicky longganisa sausage, the sweeter, coarser cousin of tapa.
  • Shangsilog: Lumpiang Shanghai spring rolls standing in as the protein, which makes it the crispiest of the six.
  • Chicksilog: fried chicken over the same garlic rice and egg, and the one children pick without being asked.

Breakfast hours that respect a worker's clock

We open at 8:00 AM every day and the silog sets are served all day until close at 1:00 AM. Filipinos in Dubai work every shift there is, which means breakfast happens at eight in the morning for some people and eleven at night for others. The garlic rice does not judge.

Before the riders start, breakfast is a walk-in

Our riders run from 11:30 in the morning until 10:30 at night, so an 8 AM silog is a walk-in or a pickup rather than a delivery. That matters if you finish a night shift at seven and want tapsilog before you sleep. The kitchen is already going and the counter is open long before the first bike leaves.

What a silog set actually includes

  • The protein, the garlic rice and the egg, plated together as one set price rather than three line items.
  • A drink or iced tea, included rather than added at the till.
  • Ten to fifteen minutes in the kitchen at a normal hour, up to thirty when the room is full, so a large morning order is worth sending ahead on WhatsApp.
  • Card, Apple Pay, Google Pay or cash at the table. Nothing about breakfast requires you to plan.

The egg, and how to ask for it

The default itlog is fried sunny side up, yolk soft, edges lacy and crisp from hot oil. That runny yolk is structural: you break it over the garlic rice and it becomes the sauce for the whole plate. If you want it cooked through, say hard or well done when you order. Nobody will mind, and it is a two-second instruction that changes the dish more than any other choice on the plate.

What Filipinos drink with breakfast

Coffee, and usually more of it than a visitor expects. Black coffee and tea are both on the menu, and every silog set already includes a drink or iced tea, so nothing about breakfast requires a second order. Iced tea with a fried breakfast reads oddly to a European palate and completely normally to a Filipino one, which is worth trying once before you decide.

What silog is not

  • It is not a fry-up. There is no toast, no beans and no attempt to fill a plate with sides. Three components, done properly, and rice is one of them.
  • It is not only breakfast. Silog is eaten at any hour, and here it is served until 1:00 in the morning, which is a deliberate choice in a shift-work city rather than an accident of the rota.
  • It is not a small meal. A silog set is a full plate, which is why ordering one each and then adding a main is the mistake most first timers make.
  • It is not fixed. Any protein plus sinangag plus itlog can become a silog, which is how the naming convention keeps producing new ones.
  • It is not merienda. The afternoon snack hour is noodle territory, and pancit is what that plate looks like instead.

Silog questions we get asked

What does silog mean?

It is a contraction of sinangag, garlic fried rice, and itlog, egg. The syllable in front names the protein, so tapa plus silog becomes tapsilog.

What time do you serve breakfast?

All day. The sets run from 8:00 in the morning to 1:00 at night, seven days a week.

Which silog should I order first?

Tapsilog or daingsilog. Both carry the best seller mark on our printed menu, which is a record of what people reorder rather than an opinion.

Do you serve pork in the silog sets?

No pork is served at Pinoy Tambayan. The tocino and longganisa sets are made without it.

Can I get breakfast delivered at 8 AM?

Not yet at that hour. Riders start at 11:30, so early breakfast is a walk-in or a pickup, and delivery is free within 5 km once they are on the road.

Is sinangag the same as ordinary fried rice?

No. Sinangag is day-old rice fried hard with garlic and nothing else: no soy sauce, no egg stirred through it, no vegetables and no diced meat. The restraint is the point, because the protein and the egg are already sitting next to it on the plate.

Can I add extra rice to a silog set?

The set already includes its garlic rice, so nothing needs adding. If you want more, plain rice and garlic rice are their own rows on the menu rather than an add-on to the set.
